Quick, easy, and oh-so Italian! What you’ll need:

1 can Cannellini beans-undrained

1 pound mild Italian sausage

1 cleaned and sliced green pepper

1 lb. undercooked pasta

1 tsp. A Little Italy

1/4 cup flour

1 cup water or chicken broth

Parmesan cheese-optional

Start by cutting your sausage into slices. Toss them into a pan,

add your A Little Italy seasoning, and a pat of butter, and brown them until cooked through.

Once your sausage is cooked through (about 12 minutes) add the green pepper and cook until the green pepper is soft-about 5 minutes. I used frozen green pepper that I always keep on hand but fresh is just as good.

Next, you want to stir the flour into the sausage/green pepper mixture. The flour will thicken your sauce when you add your can of beans with their liquid and the cup of water (or broth). Yes, add the water and beans now.

Let this thicken up a bit by simmering for a few minutes. Add your pasta. I used shells because I like the way the sauce gathers in them and it just happened to be what I had on hand. You can use any pasta you happen to have-rigatoni or mostaccioli work well, too.

Viola! Tuscan Pasta!

Makes enough to easily serve four adults. The parmesan is optional but I think it really makes the plate.
